Green Olive Paste — Naturally Matured, Unpasteurised

A fresh expression of Greek olive flavour. Our green olive paste is made from Konservolia Artas olives, a variety with Protected Geographical Indication (PGI) status, celebrated for its distinctive character.

The olives mature naturally in airtight, sealed barrels for 12 months, allowing time to develop their flavour without caustic soda to speed up the debittering process. No preservatives or artificial additives are added.

Made using only the flesh of carefully selected green olives, our paste combines a smooth, creamy texture with a lively, savoury flavour. Extra virgin olive oil, sea salt, vinegar, lemon and oregano complete this simple Greek recipe.

Unpasteurised to preserve the naturally matured olives’ distinctive flavour and character, the paste is topped with a layer of extra virgin olive oil before the jar is sealed, helping to limit contact with air.

Enjoy on toasted sourdough, spread into sandwiches, stir through dressings or serve alongside grilled vegetables and fish.
